“民以食为天,食以安为先”,饮食是人类赖以生存和维持生命的基本要素
随着改革开放的推进,社会分工的细分化和专业化程度的提高,团体膳食行业也
应运而生。作为餐饮行业的一个非常重要的细分行业,团膳行业的销售收入在餐
饮行业中占比已接近 40%,团膳行业也将随着餐饮行业的发展而获得高速的发
展。事实也证明,以前盛行的集体食堂已经被更专业化、规范化、更具先进管理
模式的专业膳食公司所取代
在今后的一段时期,由于全国各地纷纷成立区域经济区及大量产业从东往
西、从南往北战略转移,餐饮行业最佳的扩张时期已经出现,团膳行业也将进入
加速扩张的时期。小型团膳企业由于资金实力、管理水平有限,客户群往往是一
些小型企业。在这些企业运营困难之时,小型团膳企业无法及时收回欠款,资金
链出现断裂,也被迫关停或破产。因此,在持续深化改革的未来,全国各地将出
现多处区域性经济亮点,国内企业整合兼并后,将会出现更多的规模性企业,一
批优秀的、有经验及一定规模的团膳企业将更容易取得大公司的订单或密集型群
体的青睐,工业区或厂区内新时代员工的多样化、多层次餐饮消费需求,将是有
资质的餐饮团膳企业提供多样化、差异性服务的黄金发展时期
为保证共性与个性的统一,本文通过对富士康深圳工业园区餐饮管理与服务
进行了调查研究,对目前园区的餐饮服务现状进行了分析,发现仍然存在许多问
题,无论是管理效率还是材料利用的效率都较低,还有便捷性问题和设备问题也
是硬伤,尤其是在当今食品安全问题频频出现的情况下,如何保证就餐人员的安
全健康利益也是不得不重视的事情,本文就这些问题进行了调查分析后,提出了
一些有针对性的意见和建议,除开对园区的合理规划之外,最为重要的就是加强
对团膳公司进行监管,无论是人员监管还是设备监管都要落到实处,才可能提供
园区内人员满意的就餐服务保障,促进安全和谐园区的建立

Abstract
Food is what matters to the people, food to Ann first, the diet is the human
survival and maintain the basic elements of life. Along with the advancement of
reform and opening up, the social division of labor and the differentiation degree of
specialization, group meals industry also arises at the historic moment. Food industry
as a very important subdivision industry, food industry group sales income in the
catering industry than has accounted for nearly 40%, group board industry will also
along with the development of the food industry for the development of high speed.
The facts prove that prevailed in the past of the collective dining room has been more
specialization, standardization, more advanced management mode of professional
replaced dietary company.
In the future period of time, due to all parts of the country have established
regional economic zone and a large number of industry from the east to the west, from
south to north strategic transfer, the catering industry best expansion period has
appeared, group board industry will enter the period of accelerated expansion. Small
group board enterprise due to the financial strength, the management level is limited,
customers often is some small business. In the enterprise operation difficulties, small
group board enterprise can't recover in time the arrears, the fund chain appear rupture,
also be forced to shut down or bankruptcy. Therefore, continue to deepen the reform
in the future, all over the country will appear in regional economic window, the
domestic enterprise integration after merger, there will be more large-scale enterprise,
a batch of excellent, experienced and certain scale team meals service enterprise will
be more easy to get big orders or intensive group's favour, industrial factory premises
or new age staff diversified and multi-level food consumption demand, will be
qualified catering group board enterprise offer variety and diversity of the service
gold development period.
In order to ensure the unity of universality and individuality, we made an
investigation of catering management and service for foxconn shenzhen industrial
park, analyzed food service of the current situation, and found that there are still many
problems: low management efficiency,low material utilization, convenience and
equipment problem is also a mechanical damage. We have to pay attention to the
safety and health of repast personnel, especially in today's food safety problems
frequent emergence of circumstances. This paper puts forward some corresponding
opinion and suggestion on these problems after investigation and analysis.Except
reasonable planning, the most important is to strengthen food group company
supervision,botn personnel supervision and equipment supervision need tobe land
on feet,only do this can provide, Satisfactory service to the park staff ,and promote the
establishment of safety harmonious park.
