从植物油产业发展历史来说，上个世纪 80 年代初期，中国的植物油基本处
于自给自足的供需平衡状态，当时人均植物油消费量为 2.2 公斤，全国各地都有
自己的油脂公司负责当地的植物油供应。随着人们生活水平的提高，人们食用（包
括餐饮以及工业化食品）以及转化为工业用途的植物油需求量越来越大，到 2010
年，中国人均植物油消费量已经突破 20 公斤，预计未来还有继续增长的趋势。

这期间中国植物油的需求量增加迅猛，通过数据分析我们可以看到，植物油原料
的“自给自足”的状态逐步向“大量进口弥补国内不足”转变。本论文将植物油
产业格局可以分为三个层面，即“原料供给——加工能力——企业发展”加以分
析，为达到对植物油行业整体了解，首先从这三个方面给出植物油产业格局的发
展过程，在详细分析了产业格局中“原料——加工——企业”三个组成部分之后，
接下来的篇章将对影响植物油产业格局的重要因素——“价格波动”进行分析,
其中既包括对影响“价格”的因素进行分析，也对“价格波动”带来的影响进行
了整理分析。最后本研究将对从国家层面以及企业层面两个方面对中国植物油行
业存在的问题及发展建议提供自己的思路方法，希望能给予政府和企业解决实际
过程中的具体问题给予一定的思路和帮助。

ABSTRACT
Review the development history of vegetable oil industry in China,the supply and demand for
vegetable oil was the type of self-sufficiency ,in the early 1980s of the last century. At that time,
the local oil companies which were just responsible for region supply, and the oil consumption per
person is only 2.2KG per year.
With the improvement of people’s living, the demand (including food, beverage and
industrial food) was increased sharply, the consumption per person is about 20KG per year in
2010. Through the data analysis, can see that the type which gradually changing from
Self-sufficiency to huge import. In this paper, the pattern of vegetable oil industry is divided into
three levels for analysis, supply of raw materials-processing capacity-development of enterprise.
To understand the whole industry well, the text will present the development process of the
vegetable oil industry from three aspects firstly. After the detail analysis of the industrial pattern of
“raw-material-processing-enterprise”, the text will analyze the key point-price fluctuation, not
only include the factors which impact price but also include the result.
Finally, the text will give the proposal of China vegetable oil industry from state level and
enterprise level. Hope that could give some ideas and help for the government and enterprises to
solve the actual problem.
