摘 要
伴随着我国市场经济的逐渐成熟,随着经济水平的发展和人们生活水平的提
高,顾客需求越来越多元化,餐饮企业越来越多,餐饮行业的竞争也将越来越激
烈。虽然餐饮行业在迅猛发展,但随之而来的竞争压力也在加剧,餐饮业要得到
长远的发展,就必须具备自己的核心竞争力,打造在短时间内竞争对手不容易模
仿的特色,形成自己的经营理念和经营模式。处在多变的市场环境中,如何在这
样的环境中生存并做大做强,是每一家餐饮机构需要认真思考的问题。本文以郴
州大江南餐饮管理有限公司的经营为例,综合运用各种分析工具,对其外部、内
部环境如社会环境、行业环境、主要竞争者、内部资源与环境等方面进行分析,
确定其拥有的优势和劣势、机会和威胁,运用战略管理理论,结合大江南餐饮管
理有限公司自身的业务特点,提出了组织结构的设立标准,战略实施的基本准则,
构造标准化的作业流程,优化连锁经营模式,实施品牌战略,进行绩效管理等战
略设想。本文提出的湖南大江南餐饮管理有限公司发展战略,对于指导湖南大江
南餐饮管理有限公司的发展具有实践意义,同时,本文的研究成果对于同行业发
展水平相近的餐饮企业选择发展战略也有借鉴意义。

Abstract
Along with our country market economy gradually mature, along with the
development of the economic level and the improvement of people's living standard,
the customer demand is more and more diversified, catering enterprises are more and
more, the catering industry competition also will be more and more fierce. Although
the catering industry is rapidly developing, but the pressure of competition has
intensified, catering wants to get the long-term development, it must have its own core
competitiveness, make the characteristics that in the short time competing can not
imitate, forming their business ideas and business model. In the volatile market
environment, how to survive in this environment and become bigger and stronger is
every agency need to carefully think. Taking chenzhou big jiangnan food management
limited business as an example, using various analysis tools, such as the external and
internal environment ,the social environment, industry environment, the main
competitors, internal resources and environment, analyzing the advantages and
determining its weaknesses, opportunities and threats, with the strategic management
theory, combined with the big jiangnan food management limited business ’ s
characteristics, putting forward the structure of the organization establishment standard,
the basic strategy implement principles, structural standardization work, optimizing
the chain operation mode, the implementation of brand strategy, conducting the
performance management strategic idea. This paper puts forward the big hunan
jiangnan food management limited business’s development strategy, guides the big
hunan jiangnan food management limited business development which has practical
significance, and at the same time, the result of this paper for similar catering
enterprises which can also be used for reference.
